Have you heard of Bavette, Onglet, Feather Steak, Thick Rib and Popeseye? Have you ever wondered what people mean by “happy cattle”, what the difference is between “free range” and “organic”, why the fillet is so expensive and what the cheaper steaks taste like? For those curious, the “Hardiesmill 10 Steak Experience” is an original gift idea that is generating considerable interest amongst the great and the good of the beef world. Run on the farm on Friday afternoons in small groups, guests are greeted with a light lunch and then taken to see our Aberdeen Angus herd. You’ll find out what makes a great bit of beef, how flavours can vary, what to look /ask for when you’re buying beef. Our master butcher, Lee, will be giving a demonstration and then it’s back to the farmhouse for the “Hardiesmill 10 Steak Experience” – 10 different types of Aberdeen Angus steak to tease your taste buds. Tickets are £35 per person (inc VAT), maximum eight people to a group.
The objective is to give you a good (hands-on) understanding of what to look and ask for when buying beef in order to get the best possible eating experience for your money. Is the fillet the best, or only the most expensive?"
To do this, the afternoon will be spent covering the following:
Hardiesmill - A bit about the farm.
Aberdeen Angus - background to the breed.
Organic/Free-range/standard - understanding the terms.
Tour the cattle.
Breeding, feeding & handling - the difference & the impact of each on the eating.
Measurables and their effect on the beef you buy.
Marbling, hanging and maturing - definition and impact.
The cuts.

The 10 Steak Experience - Every steak, even if off the same beast, has a different flavour and level of tenderness. Get to compare Feather steak, Thick Rib, Fillet, Ribeye, Rump (Popeseye), Bavette, Onglet, Flash Fry, Sirloin, False Fillet &/or Carbonade in one sitting so you can identify which ones appeal the most to both your taste buds and your wallet!
