Beef & Spinach Curry Recipe

Serves 6

Ingredients
1kg Braising Steak cubed 
3 tbsp curry paste
2 tbsp oil
1 can chopped tomatoes
2 large onions chopped  
½ pint stock
2 cloves of garlic crushed  
12 oz frozen spinach, thawed and drained
1” root ginger peeled & grated 
2 tbsp fresh coriander chopped

Instructions
Heat oil in large pan and cook onions, garlic and ginger until softened.  Add the curry paste and cook for 1-2 minutes. 

Add the meat and cook until browned.

Stir in the tomatoes, stock, spinach and seasoning.  Bring to the boil, cover and simmer for 11/2  hours, stirring occasionally.

Remove lid and simmer for a further 30 minutes until the meat is tender.

Stir in the fresh coriander and serve with rice or naan bread.
